  • Mango Chiffon Pie *

    Ingredients

    • 2 lrg mangos ripe
    • 2 pkt unflavored gelatin
    • 3/4 c. sugar
    • 1/2 c. water
    • 1 Tbsp. lime -or possibly- lemon juice
    • 2 x egg whites
    • 1 c. whipping cream
    • 1/2 tsp vanilla
    • 1 x 9" baked pie shell sweetened whipped cream mango slices fresh mint (opt granish)

    Directions

    1. Peel, seed and slice mango. Whirl in food processor or possibly blender till smooth. Press through sieve to remove fibers. Measure 1-1/2 c..
    2. Combine gelatin and sugar in small saucepan. Add in water. Cook and stir till sugar and gelatin are dissolved. Add in lime juice and mango puree.
    3. Chill till consistency of unbeaten egg white, about 1 hour. Beat egg whites till peaks form. Mix in mango mix. Whip cream. Add in vanilla and fold into mango mix. Turn into pie shell. Chill till hard, about 2-3 hrs. To serve, top with whipped cream and sliced mango.
    4. Garnish with fresh mint.
