Malted Almond Icrcream

- 2 cans thickened cream ( or 600 ml)
- 1/2 cup maltose
- 1/3 cup brown sugar
- 6 eggs,separated
- 2 tbsp flaked almonds
Directions
- Heat cream,maltose and brown sugar in a pan until mixture comes to the boil.
- Remove from heat,cool 5 mins,whisk in egg yolks.
- Beat egg whites in medium bowl with electric mixer until firm peaks form,fold into egg yolk mixture.
- Pour into large loaf tin,cover with foil,freeze several hours or overnight until set.
- Toast almonds on oven tray in moderate oven for 5 mins.cool
- Serve icecream topped with cream,a little honey and the almonds
