• Make Ahead Spinach Manicotti

    • 1 x (15-oz) carton ricotta cheese
    • 1 x (10-oz) package frzn minced spinach, thawed and squeezed dry
    • 1 1/2 c. shredded mozzarella cheese (6 ounces, divided)
    • 3/4 c. shredded parmesan cheese (divided)
    • 1 x egg
    • 2 tsp chopped fresh parsley
    • 1/2 tsp onion pwdr
    • 1/2 tsp pepper
    • 1/8 tsp garlic pwdr
    • 2 x (28-oz) jars spaghetti sauce with meat
    • 1 1/2 c. water
    • 1 x (8-oz) package manicotti shells


    1. In a large bowl, combine ricotta, spinach, 1 c. mozzarella,1/4 c. parmesan, egg, parsley, onion pwdr, pepper and garlic pwdr. In another bowl, combine spaghetti sauce and water. Spread 1 c. sauce in an ungreased 13-by-9-by-2 inch baking dish. Stuff uncooked manicotti with spinach mix (using pastry bag, if available); arrange over sauce. Pour remaining sauce over manicotti. Sprinkle with remaining1/2 c. mozzarella and1/2 c. parmesan.
    2. Bake, uncovered, in a 350-degree oven for 40 to 50 min or possibly till heated through.
    3. You can also cover and chill overnight. Remove from the refrigerator 30 min before baking
