Maggie's simple Carrot Cake

This is the simplest Carrot cake and yet the tastiest i have made, best for breakfast because it is easy and quick to make. The cinnamon makes all the difference!

  • 2 cups sugar
  • 4 eggs
  • 1 cup oil
  • 2tsp vannila essence
  • 2 cups flour
  • 2 tsp baking soda
  • 3 tsp cinnamon
  • 1 tsp salt
  • 3 cups raw grated carrots


  1. Preheat the oven to 325 degrees F/Gas mark 5
  2. Prepare a baking bun pan by dusting in flour
  3. In a large bowl, beat the sugar, eggs, oil and vanilla together until smooth
  4. stir the dry ingredients together
  5. Add them in to the egg mixture slowly stirring constantly
  6. fold in the carrots
  7. Bake in the prepared pan for 40 minutes or until ready(When a fork put through comes out clear)
  8. Enjoy!
