  • Mackerel in Brine

    Never had it b4 June 13,2011. This was a can of mackerel in brine. Very Healthy, filling and low in calories.The tostones took longer to prepare!

    Ingredients

    • Garlic
    • 2tsp water ( I just put in a 1/4 cup of cut up fresh green onions fr freezer.
    • canned mackerel

    Directions

    1. Olive Oil in hot frying pan 2 tsp heat,add mash garlic from mortar & pestle (2 cloves of garlic)
    2. 1/4 scallions (green onions chopped from freezer)
    3. small can of tomato sauce
    4. I used the water from the frozen fresh cut scallions in place of 2tsp of water, Cook 5 minutes for ingredients and tomato sauce and open can of mackerel toss in the pan, cover and cook for 10 minutes medium heat.
