  • Macaroni Pie

    Ingredients

    • 6 ounce Small elbow macaroni Extra virgin olive oil spray
    • 1/2 med Onion, grated
    • 1 med Green bell pepper, grated
    • 1 c. Fat-free ricotta
    • 4 ounce Sharp cheddar cheese, grated, divided Warm pepper sauce, several drops Salt and pepper

    Directions

    1. Place a large pot with 3-4 qts water to boil. When water boils, add in macaroni and boil 10 min. Meanwhile spray a 10-inch non-stick skillet with vegetable oil spray and saute/fry onions and green pepper for 5 min.
    2. Combine ricotta and half the cheddar cheese. Add in warm pepper sauce and fold in onions and green pepper. Drain macaroni and add in to cheese mix. Add in salt and pepper to taste. Return to skillet and sprinkle with remaining Cheddar cheese proportionately over top. Cover with lid and let set on medium heat 10 min.
