  • Macaroni, Cheese And Ham

    Ingredients

    • 1 1/2 c. evaporated skim lowfat milk (1 12-ounce. can)
    • 3 Tbsp. all-purpose flour
    • 1 1/2 c. shredded reduced-fat cheddar cheese
    • 2 tsp prepared mustard
    • 1/4 tsp black pepper
    • 2 1/2 c. cooked elbow macaroni rinsed and liquid removed
    • 1 x full c. diced 97% fat free ham
    • 3 Tbsp. fine bread crumbs

    Directions

    1. Preheat oven to 350 degrees. Spray an 8 X 8 baking dish with butter-flavored cooking spray.
    2. In a covered jar, combine evaporated skim lowfat milk and flour. Shake well to combine. Pour lowfat milk mix into a medium saucepan sprayed with butter-flavored cooking spray. Cook over medium heat, stirring often, till mix starts to thicken. Stir in Cheddar cheese, mustard, and black pepper. Continue cooking, stirring often, till cheese melts. Add in macaroni and ham. Stir well to combine. Pour mix into prepared baking dish. Proportionately sprinkle bread crumbs over top. Bake for 30 min. Place baking dish on a wire rack and let set for 5 min.
    3. Serves 6
