  • Macaroni Casserole With Soy Cheese

    Ingredients

    • 1 c. minced onion
    • 1/4 c. minced celery
    • 10 3/4 ounce Healthy Request Cream of Mushroom soup
    • 1/4 c. soy or possibly dairy lowfat milk cheese, grated
    • 1 Tbsp. dry parsley
    • 1/4 tsp pepper
    • 15 ounce soybeans, rinsed liquid removed & grnd
    • 2 c. dry macaroni, cooked
    • 4 ounce Cheddar-style soy

    Directions

    1. This is a hearty dish, a "comfort food" the whole family will like.
    2. Preheat the oven to 350 .
    3. Saute/fry onion and celery in a nonstick pan (add in a little water if needed to prevent sticking). Add in soup, soy lowfat milk, parsley and pepper. Mix well.
    4. Stir in grnd soybeans, cooked macaroni and half the soy cheese. Place in a lightly oiled 2-qt casserole dish and top with remaining cheese. Bake at 350 for about 20 min, till cheese is melted and casserole is bubbly.
    5. Yield: 6 servings
    6. Serving size: 1 c.
    7. Green Chili Mac Add in 1 can (4 ounce) mild minced green chilies to the casserole when you stir in the soybeans. Substitute jalalpeno soy cheese for the Cheddar-style soy cheese.
