Ingredients

  • 2 1/2 c. cheddar cheese shredded,divided
  • 1 c. elbow macaroni uncooked
  • 4 x Large eggs
  • 1/4 tsp salt
  • 2 1/4 c. lowfat milk
  • 1/2 c. biscuit mix
  • 1/4 tsp warm pepper sauce

Directions

  1. Preheat the oven to 400 degrees. Grease a 10-inch pie plate. In a medium-sized bowl, combine 2 c. cheese and the macaroni; sprinkle into the pie plate. Except for the remaining 1/4 c. cheese, beat the remaining ingredients till smooth for about 15 seconds in a blender on high speed
  2. (or possibly for 1 minute in a large bowl with a hand beater). Pour into the pie plate. Bake for about 40 min, till a knife inserted in the center comes out clean. Sprinkle with the remaining 1/4 c. cheese. Bake till the cheese is melted, 1 to 2 min. Cold for 10 min then cut into wedges.
  3. Makes 6-8 servings.
  4. Other cheeses can be substituted in this recipe - try swiss!
