MACARONI AND CHEESE
LOTS OF CHEDDAR CHEESE INSIDE AND ON TOP MAKE THIS A DELICIOUS, CREAMY MACARONI AND CHEESE. SERVE THIS CASSEROLE AS A MAIN DISH WITH A SALAD OF SERVE IT AS A SIDE DISH. Ingredients
- 12 OUNCES MACARONI
- 4 TABLESPOONS BUTTER
- 1/4 CUP ORGANIC WHOLE WHEAT FLOUR
- 1/2 TEASPOON SALT
- 1/8 TEASPOON ORGANIC GROUND BLACK PEPPER
- 1 CUP ORGANIC LIGHT CREAM
- 1 CUP ORGANIC MILK
- 1 TEASPOON ORGANIC DIJON MUSTARD
- 4 CUPS ORGANIC CHEDDAR CHEESE, SHREDDED
- 1 CUP ORGANIC SOFT BREAD CRUMBS, TOSSED WITH 1 1/2 TABLESPOONS MELTED BUTTER.
Directions
- HEAT OVEN TO 375 DEGREES. GREASE A 2 QUART WHITE SQUARE GLASS BAKING DISH.
- COOK MACARONI IN BOILING, SALTED WATER FOLLOWING PACKAGE DIRECTIONS. DRAIN IN A COLANDER AND RINSE WITH HOT WATER.
- IN A MEDIUM SAUCEPAN, MELT THE BUTTER OVER MEDIUM HEAT.
- GRADUALLY ADD THE 1/4 CUP ORGANIC WHOLE WHEAT FLOUR, STIRRING CONTINUALLY AS IT THICKENS.
- ADD THE SALT, PEPPER, AND LIGHT CREAM, CONTINUING TO STIR AS IT THICKENS AND BEGIN ADDING THE MILK, DIJON MUSTARD AND TWO CUPS OF CHEESE.
- CONTINUE COOKING, STIRRING UNTIL CHEESE IS MELTED.
- COMBINE SAUCE MIXTURE WITH THE DRAINED MACARONI.
- SPOON INTO PREPARED BAKING DISH AND TOP WITH THE REMAINING 2 CUPS OF SHREDDED CHEESE.
- SCATTER THE BUTTERED BREAD CRUMBS EVENLY OVER THE CHEESE LAYER.
- BAKE FOR ABOUT 25 MINUTES, UNTIL LIGHTLY BROWNED AND BUBBLY.
