  • Macadamia Crusted Fish Or Chicken

    Ingredients

    • 2 piece fish fillet (about 3/4 lb.) or possibly equivalent amount of boneless/skinless chicken breasts
    • 1 c. minced macadamia nut
    • 1/2 c. seasoned bread crumbs
    • 1 lrg egg
    • 1 x squeeze lemon juice
    • 2 tsp Worcestershire sauce (Preferably White Wine)
    • 2 tsp dry sherry
    • 2 tsp soy sauce
    • 1 tsp thyme
    • 1 tsp cajun seasoning Salt & pepper to taste Oil for frying

    Directions

    1. Put the sherry, Worcestershire, soy sauce, lemon juice, thyme, and cajun seasoning in a bowl and mix. Add in fish or possibly chiclen fillets and let marinate for 45 min to an hour.
    2. Place macadamias and bread crumbs in a flat dish. Beat egg in a bowl. Take fillets out of marinade and pat dry. Salt and pepper and dip into egg then roll in nut/crumb mix making sure they are entirely coated. Sort of push the coating into the fish to make it stick.
    3. Heat oil in a skillet on med. high heat. When almost smoking, add in fillets and cook till you can smell the nuts, but not burnt smelling. Turn over and repeat.
