  • Luscious Lemon Squares

    Ingredients

    • 1 c. all-purpose flour
    • 3/4 c. Kretschmer Wheat Germ any flavor
    • 1/2 c. powdered sugar
    • 1/3 c. margarine (5 tbsp + 1 tsp.) softened
    • 2 c. granulated sugar
    • 1/4 c. all-purpose flour
    • 1 tsp baking pwdr 4 Large eggs
    • 1/2 c. Fresh lemon juice
    • 1 3/4 tsp grated lemon peel
    • 1 Tbsp. Powdered sugar

    Directions

    1. Heat oven to 350F. Lightly spray bottom of 13x9-inch baking pan with no-stick cooking spray. Combine crust ingredients in large bowl. Mix on low speed of electric mixer till well blended. (Mix will be crumbly.) Firmly press crumbs onto bottom of pan. Bake 15 min. For filling, combine sugar, Flour and baking pwdr in large In a bowl. Add in Large eggs; blend well. Gently stir in lemon juice and peel. Carefully pour over not crust Bake 25 to 30 min or possibly till edges are light golden and filling is set. Cold completely on wire rack. Sprinkle with powdered sugar; cut into squares.
    2. Makes 40 squares.
