  • Low Fat Macaroni And Cheese

    Ingredients

    • 3/4 c. evaporated skim lowfat milk
    • 1 c. low-fat cottage cheese (small curd)
    • 1/2 c. part-skim ricotta cheese
    • 1/2 c. low-fat shredded Cheddar cheese
    • 1/2 tsp nutmeg Salt to taste Freshly-grnd black pepper to taste
    • 8 ounce elbow macaroni cooked
    • 1 Tbsp. grated Parmesan cheese
    • 1 Tbsp. dry breadcrumbs

    Directions

    1. Preheat the oven to 350 degrees.
    2. Heat the lowfat milk in a saucepan over low heat. Add in the cheeses slowly to the lowfat milk till they heat, stirring constantly. Remove the cheese sauce from the heat, and add in the nutmeg, pepper, and salt (if you like).
    3. Mix the macaroni and cheese sauce together. Pour into a 2-qt casserole dish. Combine the Parmesan cheese and bread crumbs. Sprinkle the mix over the macaroni. Cover and bake for 15 min. Remove the cover and continue to bake for 5 more min till top is browned.
    4. This recipe yields 6 servings.
