Low Fat `Creamed' Greens And Onions
Ingredients
- 2 lb Small white onions
- 1 1/2 lb Kale or possibly other greens, coarsely minced
- 1 tsp Margarine or possibly butter
- 2 x To 3 tb flour
- 1 c. Skim lowfat milk
- 1 tsp Rosemary, crumbled
- 1 tsp Worchestershire ds Pepper
Directions
- Peel onions and place in a large saucepan or possibly skillet sprayed with nonstick cooking spray. Cook 3 min, stirring, then cover and reduce heat to low. Cook 5-10 min. Add in greens, cover and simer in their own juices till simmer, 5-7 min. Drain. Heat margarine in small saucepan, gradually add in flour and cook 1 minute. Stirring constantly, add in lowfat milk gradually and continue stirring till thickened. Stir in seasonings. Pour over greens and onions; gently blend.
