Low Fat Banana Bran Bars
Ingredients
- 1 c. all-purpose flour
- 1 c. bran flake cereal, crushed
- 1/4 c. firmly packed brown sugar
- 1 1/2 tsp grnd cinnamon
- 1 tsp baking pwdr
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 c. skim lowfat milk
- 2 x Large eggs
- 1 x carrot, shredded
- 1 lrg ripe banana, mashed
- 1/3 c. minced walnuts
Directions
- Preheat oven to 375 degrees. Lightly grease and 8-inch square baking pan. In medium bowl, combine flour, cereal, brown sugar, cinnamon, baking pwdr, baking soda and salt; mix well. In a small bowl, combine lowfat milk, Large eggs, carrot, banana and walnuts. Add in to dry ingredients, mixing well.
- Spoon batter into pan. Bake 25 to 35 min, or possibly till browned. Cold in pan on wire rack. Cut into 12 bars.
