  • Low Fat Banana Bran Bars

    Ingredients

    • 1 c. all-purpose flour
    • 1 c. bran flake cereal, crushed
    • 1/4 c. firmly packed brown sugar
    • 1 1/2 tsp grnd cinnamon
    • 1 tsp baking pwdr
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1 c. skim lowfat milk
    • 2 x Large eggs
    • 1 x carrot, shredded
    • 1 lrg ripe banana, mashed
    • 1/3 c. minced walnuts

    Directions

    1. Preheat oven to 375 degrees. Lightly grease and 8-inch square baking pan. In medium bowl, combine flour, cereal, brown sugar, cinnamon, baking pwdr, baking soda and salt; mix well. In a small bowl, combine lowfat milk, Large eggs, carrot, banana and walnuts. Add in to dry ingredients, mixing well.
    2. Spoon batter into pan. Bake 25 to 35 min, or possibly till browned. Cold in pan on wire rack. Cut into 12 bars.
