Low Cal Vegetarian Vegetable Soup
Ingredients
- 1 Tbsp. vegetable oil
- 1 sm onion, minced
- 2 c. diced peeled potatoes
- 1 c. minced carrots
- 2 x Knorr Vegetarian Vegetable Cubes
- 4 c. water
- 1 pkt frzn mixed vegetables or possibly - 1/2 c. each frzn corn, peas, string beans Parsley Pepper
Directions
- Saute/fry minced onion in vegetable oil till soft and golden brown.
- Add in potatoes, carrots, Knorr Cubes, water, and bring to boil. Simmer 10 min.
- Add in frzn vegetables and bring back to boil. Simmer 10 min.
- Sprinkle with minced parsley and pepper.
- *Note: You can also add in some cooked small pasta for the last 5 min of cooking time.
