Lobster Bisque with White Wine and Cognac

What better way to warm your tummy waiting for the game to start ,a great big mug of creamy Lobster Bisque ,my famous fried shrimp and creamy slaw and Caramel Apple tarts!!!Touchdown!

Ingredients

  • 6 lbs of cooked Lobster
  • 2 large white Onions
  • 1/2 bunch of finely diced celery
  • 3Carrots diced
  • 2 anchovy fillets
  • 1-/1/2 cups dry white wine
  • 2 tbs sea salt
  • 2 tsp whole black peppercorns
  • 1/2 tsp mace
  • 5 tbs unsalted butter
  • 1/2 cup grated onion
  • 1 tbls all purpose flower
  • 2-1/2 cps half and half
  • 3 cups milk
  • 5 cups lobster shell broth see step 2
  • 1/8 tsp cayenne pepper
  • 2 -1/2 tbs Cognac
  • 1/4 old bay seasoning

Directions

  1. Remove all meat from cooked lobster
  2. Dice meat and place in the fridge
  3. Crush shells and place in large tock pot with onion,celery,carrots,anchovies and white wine salt and peppercorns
  4. and mace
  5. Add water to barely cover,simmer for 1 hour skimming as needed
  6. Strain through cheese cloth
  7. In a large stock pot melt butter and grated onion till soft
  8. sprinkle flour over onion and cook for 5 minutes do not burn the flour
  9. stir in half and half and milk and cook about 10 more minutes
  10. stirring occasionally
  11. Stir on the Lobster meat
  12. add the cognac heat over low flame about 7 minutes add old bay seasoning
  13. Serve in nice Big Mugs ,and dust with Paprika and a sprig of Parsley This is a winner ,no matter who your rooting for!!!
