Loaded Mashed Potato Bake

- 3 pounds Red Potatoes
- 1/2 bell pepper
- 2 green onions (scallions)
- 3 slices cooked crispy bacon
- 1/4 cup light cream
- 1/4 stick sweet cream butter
- salt & black Pepper to taste
- one minced clove of garlic
- 1/2 cup shredded cheddar cheese
- 1/4 cup parmesan cheese
Directions
- Peel and quarter potatoes and add to boiling salted water and cook 15 minutes or until fork tender, drain and add to a large bowl, add cream, butter, minced garlic clove, S & P, whip with a hand mixer
- Cut and diced bell pepper finely, diced finely scallions, add chopped cooked bacon bits, stir well to combine
- Transfer to a non stick baking dish, add cheeses and gently fold in the mixture
- Place into a hot 400 F oven for 15 minutes
- Serve and enjoy!
