Lite Sweet Potato Pie
Ingredients
- 1 pkg. (8 ounce) cream cheese, softened
- 2 large eggs, well beaten
- 3/4 c. sugar
- 2 prepared (9 inch) graham cracker pie crusts
- 2 pkg. (3 1/2 ounce) instant vanilla pudding mix
- 3/4 c. lowfat milk
- 2 c. peeled, cooked and mashed sweet potatoes (about 2 or possibly 3)
- 1 1/2 c. Cold Whip
- 1/2 c. minced nuts (optional)
- Cinnamon to taste
Directions
- Preheat oven to 350 degrees. Mix together cheese and large eggs. Add in sugar, cinnamon, beat till fluffy. Spread mix in pie crusts and bake 20 min. Let cool. In large bowl, mix pudding mix and lowfat milk. Add in sweet potato mix and mix well; mix in Cool whip. Spread mix in pie crust and garnish with nuts.(Mrs. J.C. "Catfish" Henderson)
