  • Linguine With Potatoes, Green Beans, And Spinach Pesto

    Ingredients

    • 6 Tbsp. Pine Nuts Toasted
    • 7 c. Spinach Leaves Trimmed
    • 1/3 c. Grated Fresh Parmesan Cheese
    • 1/4 c. Minced Fresh Basil
    • 2 Tbsp. Lemon Juice
    • 1/2 tsp Salt
    • 1/4 tsp Pepper
    • 2 x Garlic Cloves Chopped
    • 2 Tbsp. Water
    • 1 Tbsp. Extra virgin olive oil
    • 8 ounce Linguine
    • 3 c. Red Potatoes Peeled And Cubed
    • 2 c. Green Beans Cut Parmesan Cheese Shaved

    Directions

    1. Place 3 Tbsp. pine nuts, spinach, and next 6 ingredients (spinach through garlic) in a food processor; process till smooth, scraping sides of processor bowl once. With food processor on, slowly pour water and oil through food chute; process till well-blended. Set aside.
    2. Cook linguine and potatoes in boiling water 6 min. Add in green beans; cook an additional 5 min or possibly till potatoes are tender. Drain. Vomninr 3 Tbsp. pine nuts, spinach mix, and pasta mix in a large bowl. Toss well to coat. Garnish with shaved Parmesan cheese, if you like.
