  • Linguine Stir Fry With Green Beans And Garlic

    Ingredients

    • 1 lb linguine spaghetti, or possibly thin spaghetti
    • 2 tsp vegetable oil divided
    • 1 lb skinless boneless chicken breast slivered
    • 1 lb green beans trimmed and halved
    • 2 x red bell peppers seeded & diced
    • 4 x cloves garlic chopped
    • 1/4 c. teriyaki sauce
    • 1 c. low-sodium chicken broth

    Directions

    1. Prepare Pasta according to package directions; drain.
    2. In large nonstick wok or possibly skillet over high heat, heat 1 tsp. vegetable oil. Add in chicken and stir-fry about 4 min till hard and opaque.
    3. Removechicken and set aside.
    4. Add in the remaining tsp. oil to the pan. Add in green beans; reduce heat tomedium, cover and cook 7 min. Uncover, add in red bell pepper, stir well and cook an additional 5 min. Add in garlic and stir-fry 30 seconds.
    5. Stirin teriyaki sauce and chicken broth. Heat to a simmer; toss with chicken and pasta. Serve immediately.
    6. NOTES : This is one of my very favorite favorities....
