  • Lentils With Turkey Drumsticks And Green Olives

    Ingredients

    • 2 lb turkey drumsticks (3x2/3-lb) Salt and black pepper
    • 2 Tbsp. vegetable oil
    • 1 med onion minced
    • 2 c. dry white wine
    • 1/2 c. water
    • 1 Tbsp. minced fresh thyme
    • 1 Tbsp. butter
    • 2 med carrots peeled and diced
    • 1 med celery stalk diced
    • 1 med leek (white and tender green parts) cleaned thoroughly and diced
    • 3 c. brown or possibly green lentils picked over and rinsed
    • 10 c. water
    • 3 c. coarsely minced spinach trimmed, washed, and dry
    • 1 c. pitted brine-cured green olives minced
    • 1 1/2 Tbsp. fresh lemon juice Salt and black pepper to taste

    Directions

    1. TURKEY (2 Hours) : Preheated oven to 350F.
    2. Sprinkle drumsticks with salt and grnd black pepper to taste. Heat in a large, nonreactive, ovenproof skillet over medium-high heat and add in the oil. Add in the drumsticks to the skillet and cook till browned on one side, about 10 min. Turn and brown the other side, about 5 min more.
    3. Remove to a platter and pour off all but 2 Tbsp. of the fat. Add in the onion to the pan and cook, stirring, just till softened, about 3 min.
    4. Return the turkey to the skillet and add in wine. Sprinkle with water and fresh thyme. Cover and bring to a boil. Bake in the oven till the turkey is tender, about 1 1/2 hrs.
    5. LENTILS (40 MINS): Meanwhile, heat butter in a large saucepan over medium heat. Add in the carrots, celery and leek. Cook, stirring occasionally, just till softened, about 5 min. Stir in lentils and water. Bring to a boil. Reduce the heat and simmer, partially covered, till the lentils are tender, about 30 min. Drain.
    6. VEGETABLE Saute/fry (8 mins): Remove the drumsticks to a plate, cover with aluminum foil, and keep hot.
    7. Add in to the skillet the spinach, olives and lemon juice. Cook over medium heat till the spinach is wilted, about 6 min. Stir in the lentils.
    8. Season with: Salt and grnd black pepper to taste Spoon the lentil mix into a large, shallow bowl, arrange the turkey on top, and serve.
    9. NOTES : Lentils, spinach and olives with braised turkey drumsticks. "This recipe is great for stretching just a little meat a long way and is also delicious with duck legs in place of the turkey."
