Ingredients

  • 4 lbs cleaned lentils (soak in cold water)
  • 2 cups vegetable base
  • 4 1/2 gals water
  • 1/2 cup vegetable oil
  • 4 cups diced onions
  • 2 cups diced celery
  • 2 cups diced carrots
  • 1/2 cup minced garlic
  • 4 each bay leaves
  • salt and pepper to taste

Directions

  1. In hot tilt grill, add onions, celery, carrots, and garlic.
  2. Sweat until translucent.
  3. Add water, vegetable base, bay leaves, and lentils.
  4. Bring to a boil, reduce to simmer.
  5. Simmer for 2 hours until lentils are tender.
  6. Adjust seasoning as necessary.
  7. Remove bay leaves before serving.
