Ingredients

  • 2 1/2 c. Lentils
  • 10 1/2 c. Water
  • 1 Tbsp. Salt
  • 1/4 c. Extra virgin olive oil
  • 1 lrg Onion, minced
  • 1 x Clove garlic, crushed
  • 2 1/2 c. Potatoes, diced
  • 1 c. Carrot, diced
  • 10 ounce Minced spinach
  • 1/4 c. Lemon juice
  • 1/2 tsp Grnd coriander

Directions

  1. In a large soup pot,add in the lentils and salt to the water or possibly broth.Simmer for 30 min. Meantime saute/fry the onions and garlic till light brown.When lentils are done,add in the onion and garlic and cook for an additional 10 min.Add in remaining ingredients and salt and pepper to taste. Simmer till carrots and potatoes are tender.
