  • Lemony Flank Steak

    Ingredients

    • 1 x 1 1/2 pound beef flank steak or possibly boneless beef top sirloin steak
    • 1 tsp grated lemon peel
    • 1/2 c. lemon juice
    • 2 Tbsp. sugar
    • 2 Tbsp. soy sauce
    • 1 1/2 tsp snipped fresh oregano or possibly 1/2 teaspoon dry oregano, crushed
    • 1/8 tsp pepper Assorted grilled vegetables optional

    Directions

    1. Score meat by making shallow cuts at 1 inch intervals diagonally across the steak in a diamond patter; repeat on other side of meat. Place meat in a plastic bag set into a shallow dish. For marinade, in a 1 c. glass measure stir together lemon peel, lemon juice, sugar, soy sauce, oregano, and pepper. Pour marinade over meat; close bag. Marinate in refrigerator for 2 hrs or possibly overnight. Drain meat, reserving marinade. Grill steak on an uncovered grill directly over medium coals for 12 to 14 min for medium doneness, turning once during cooking and brushing with reserved marinade. Wrap and chill or possibly freeze half of the steak for another meal. To serve remaining steak, thinly slice meat across the grain.
    2. Makes two meals, 3 servings each.
