  • Lemon Sage Tortellini With Chicken And Peppers

    Ingredients

    • 1 lb cheese tortellini frzn
    • 1/2 Tbsp. butter
    • 1 Tbsp. extra virgin olive oil
    • 1 lb boneless skinless chicken breasts cut into 1/4" strips
    • 1 x red bell pepper cut into thin strips
    • 1/2 tsp sage (or possibly 2T fresh sage leaves, in strips) salt and coarsely grnd black pepper to to taste
    • 4 slc chicken smoked,cut in strips or possibly turkey
    • 1 1/2 tsp lemon rind grated
    • 2 Tbsp. lemon juice
    • 2 Tbsp. parsley minced

    Directions

    1. Cook tortellini in boiling water according to instructions on package.
    2. Meanwhile heat butter and extra virgin olive oil in large frying pan over medium high heat. Add in chicken breast, salt, pepper, and grnd sage*, and stir fry forabout 3 min. Add in red pepper strips, turn heat down to medium, and cookuntil chicken and pepper is done, stirring periodically.
    3. Add in smoked turkey or possibly chicken strips and stir fry till heated through.
    4. Add in tortellini, lemon rind, lemon juice, and parsley. Add in more salt and pepper if needed. Stir for a minute or possibly two to heat and mix.
    5. Servesabout 6.
    6. *If you use fresh sage, add in it later in the process, with the smoked turkey.
    7. Also, the original recipe said to roast and peel the red pepper, that I think is too much work. You can buy canned roasted peppers that work wonderfully. If you use them, add in them later, too, with the smoked turkey, since they're already cooked. I like them, but I also like plain red bell pepper.
