    Wanted to make a lemon loaf but when I went to get the lemon found I did not have any, so instead I used my Lemon Chiffon Fruit dip mixture that Epicure sells and well all I can say is that I will be making my lemon loaf this way, even my mother loved it. I do not usually bake not my thing unless its a one bowl loaf like this one. Hope you enjoy

    Ingredients

    • 1/2 cup butter or 1/2 cup margarine or 1/2 cup shortening ( We prefer butter)
    • 1 cup sugar
    • 2 eggs
    • 1/2 cup milk, 2% is fine
    • 1 1/2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 lemon, rind of DID NOT USE use as I did not have any lemons so I used my Epicure Lemon Chiffon mix
    • 1Tbs of Lemon Chiffon
    • 1/4 tsp of pure lemon extract

    Directions

    2. In a large bowl, cream butter and sugar.
    3. Add eggs, one at a time, beating until creamy.
    4. Blend in milk and lemon extract
    5. In another bowl, mix together flour, baking powder, salt and lemon chiffon
    6. Pour into batter.
    7. Stir to moisten.
    8. Scrape into greased 9 x 5 inch loaf pan.
    9. Sprinkled lemon chiffon over top
    10. Bake in 350f degree oven for 55 to 60 minutes.
    11. Cool in pan for 5 minutes.
    12. Remove to rack and while still hot, with a toothpick poke holes all over the top of the loaf, and spoon glaze evenly over.
    13. Cool.
