  • Lemon Ice Box Pie (For Non Weight Watchers)

    Ingredients

    • 1 1/2 c. Cookie crumbs lemon
    • 1/2 c. Almonds finely minced
    • 6 Tbsp. Butter
    • 1/4 c. Sugar
    • 1/4 c. Heavy Cream
    • 1 c. Powdered Sugar
    • 6 ounce Cream Cheese softened
    • 1/2 c. Lowfat sour cream
    • 1/2 c. Whipped Topping
    • 1 x 3 1/2 Oz lemon pie filling
    • 1 3/4 c. Lowfat milk
    • 1 tsp Lemon Juice
    • 1 tsp Lemon rind grated
    • 2 c. Whipped Topping
    • 1/4 c. Lemon drop hard candies finely crushed

    Directions

    1. For crust: Mix cookie crumbs, grnd almonds, butter, sugar and heavy creamtogether. Pat in bottom and up sides of a nine-inch pie pan. Bake at 300 degreesfor 15 min. Set aside to cold.
    2. For filling: Mix powdered sugar, softened cream cheese, lowfat sour cream and whipped topping till smooth and creamy. Spread in bottom of cooled crust.
    3. Mixlemon pudding and pie mix (according to package directions), lowfat milk, lemon juice and grated lemon rind. Spread over cream cheese layer in crust.
    4. Chill forone hour.
    5. For topping: Spread whipped topping over top of pie and sprinkle with crushedlemon candies. Chill.
