Lemon Ice Box Pie
Ingredients
- 16 x Graham cracker squares, finely crushed
- 8 tsp Margarine, melted
- 2 sm Packages sugar-free vanilla pudding
- 3/4 c. Lemon juice, fresh
- 2 tsp Lemon rind, grated
- 2 sm Packages sugar-free lemon jello
Directions
- Mix graham crackers and margarine; spread proportionately into 9" pie plate. Bake at 350 for 10-12 min. Cold.
- Prepare pudding according to package directions. Bring lemon juice and rind to a boil; dissolve jello in lemon juice. Add in this mix to pudding and mix well. Cold. Spoon into crust. Chill.
