  • Lemon Herb Chicken

    Ingredients

    • 48 each 4 oz chicken breasts
    • 2 bottles lemon juice
    • 1/2 cup lemon pepper spice
    • 1/2 cup crushed thyme
    • 1/2 crushed basil
    • 1/2 cup poultry seasoning
    • 1/4 cup garlic powder
    • 1/2 cup onion powder
    • 1 pint honey
    • 1 cup Worcestershire sauce
    • 1/4 cup salt
    • 2 cups olive oil

    Directions

    1. Thaw chicken cutlet according to safe handling procedures.
    2. Trim fat.
    3. Blend all seasoning, honey, lemon, oil in the blender
    4. Place drained and clean chicken in a roasting pan and pour seasoning marinade over the chicken.
    5. Marinate chicken- stirring occasionally, for a minimum of 2 hours, up to 18 hours in advance.
    6. Remove from marinade, shaking off excess marinade, and place on a parchment lined sheet pan to bake.
    7. Roast chicken in 375 degree convection oven (or 425 conventional oven) for 15 mintues, or until internal temperature is 165. Fast cooking at higher heat will require less time and allows chicken to be batch cooked.
