    Lemon Glazed Sweet Potatoes

    This month Tammie and I are making some recipes that are a variation of the traditional dishes that are associated with holiday meals. Here in the Carolinas we love sweet potatoes. This is a rich and tasty version of a favorite side dish! Enjoy!

    Ingredients

    • 4 large sweet potatoes (about 3.5 lbs)
    • ¾ cup water
    • 1/3 cup honey
    • 1/3 cup light brown sugar, packed
    • ½ teaspoon salt
    • 3 tablespoons lemon juice
    • ½ teaspoon cinnamon
    • 2 tablespoons butter

    Directions

    1. Wash sweet potatoes and cut into ¾ “ thick slices.
    2. Salt a large pot of water and bring to a boil.
    3. Cook sweet potatoes for 15 minutes. Drain.
    4. In a small pot bring water, honey, sugar and salt to a boil.
    5. Reduce to a simmer and stir for 10 minutes.
    6. Remove from the heat, add the last 3 ingredients and stir.
    7. Pour into a 9×13 baking pan or broiler tray.
    8. Place the slices of sweet potatoes in one layer in the pan, then turn so they are coated.
    9. Bake at 350 for 1 hour turning every 10 – 15 minutes.
