Lemon Glazed Sweet Potatoes

Here in the Carolinas we love sweet potatoes. This is a rich and tasty version of a favorite side dish! Enjoy! Ingredients
- 4 large sweet potatoes (about 3.5 lbs)
- ¾ cup water
- 1/3 cup honey
- 1/3 cup light brown sugar, packed
- ½ teaspoon salt
- 3 tablespoons lemon juice
- ½ teaspoon cinnamon
- 2 tablespoons butter
Directions
- Wash sweet potatoes and cut into ¾ â thick slices.
- Salt a large pot of water and bring to a boil.
- Cook sweet potatoes for 15 minutes. Drain.
- In a small pot bring water, honey, sugar and salt to a boil.
- Reduce to a simmer and stir for 10 minutes.
- Remove from the heat, add the last 3 ingredients and stir.
- Pour into a 9Ã13 baking pan or broiler tray.
- Place the slices of sweet potatoes in one layer in the pan, then turn so they are coated.
- Bake at 350 for 1 hour turning every 10 â 15 minutes.
