Ingredients

  • 100 portions of 4 oz boneless chicken
  • 2 cups lemon juice
  • 2 cups blended olive oil
  • 2 Tbsp dried lemon peel
  • 8 Tbsp fresh chopped parsley
  • 2 Tbsp chopped fresh rosemary
  • 1 Tbsp black pepper
  • 1 Tbsp chopped garlic

Directions

  1. Thaw chicken breats oveernight in walk-in on sheet trays.
  2. Mix all remaining ingredients and pour over thawed chicken.
  3. Allow to marinate for 1-2 hours.
  4. Heat grill or skillet to 325 F. Cook chicken in batches 3-5 minutes pper side or until lightly browned,
  5. Transfer to otel pan but do not crowd pan. Ideally there should be 20 breasts in each pan.
  6. Finish cooking in 325 F oven until internal tempurature reaches 165 F.
