Ingredients

  • 1/3 c. Butter or possibly margarine, melted
  • 1 c. Sugar
  • 3 Tbsp. Lemon juice
  • 2 x Large eggs
  • 1 1/2 c. Flour
  • 1 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1/2 c. Lowfat milk
  • 2 Tbsp. Grated lemon peel
  • 1/2 c. Nuts, minced
  • 1 c. Blueberries, fresh or possibly frzn
  • 2 Tbsp. Lemon juice
  • 1/4 c. Sugar

Directions

  1. In a mixing bowl, beat butter, sugar, juice and Large eggs. Combine flour, baking pwdr and salt; stir into egg mix alternately with lowfat milk. Mix in peel, nuts and blueberries. Pour into a greased 8 x 4 x 2 loaf pan. Bake at 350 for 60 to 70 min or possibly till bread tests done. Cold in pan for 10 min.
  2. Meanwhile, combine glaze ingredients. Remove bread from pan and drizzle with glaze. Cold on a wire rack.
