    Lemon Basil Grilled Chicken

    This is a simple and tasty summer grilled chicken recipe. We usually cook this with legs or thighs, but it goes well with chicken breast too. Consider doubling the recipe as it is even better the next day. We used left overs of this chicken to make the chicken noodle soup I posted recently.

    Ingredients

    • 1 1/2 pounds chicken pieces or 1 pound boneless, skinless chicken pieces
    • 1/4 cup lemon juice
    • 2 Tbsp olive oil or vegetable oil
    • 1/4 cup chopped fresh basil leaves
    • 3 Tbsp grated parmesan cheese
    • 2 garlic cloves finely chopped
    • kosher salt and pepper to taste

    Directions

    1. Preheat grill to medium.
    2. In a small bowl, combine all ingredients except chicken and stir vigorously.
    3. Put chicken pieces in a shallow dish or ziplock bag and pour contents of bowl over chicken. Marinate in refrigerator for 30 minutes to 1 hour or more.
    4. Grill chicken over direct or indirect heat, turning frequently to avoid burning if cooking over direct heat. Baste frequently with the marinade remaining in the bag or bowl.

            Easy, delish dish! Lemon and basil are a wonderful combination and keep the chicken moist when marinating.

              Awsome recipe, though I admit I mucked with it a little. I ran out of lemon juice (had to double the recipe and only had 1/4 c) so to make up the missing, I actually added a fruit wine (is that redundant?)... Exotic Fruit White Zin. Everyone complained that I didn't make enough of the dish!!! I did make Fettucini, then, once the chicken was done, I glazed the pan with a splash more of wine and the rest of the marinade (made sure to scrape the bottom of the pan) then threw the pasta in to fry/coat it. Oh YUM.

                I didn't have fresh basil on hand, so I used dried. I also used garlic powder instead of cloves. It was so good that even my very picky 3-year-old son ate it!

                    I made it last night for my family. I added a little Agave syrup (could have sugar instead) to the marinade. It helps to brown the chicken nicely. Also, marinated for only about 30 minutes. Longer in lemon juice tends to "cook" the chicken prematurely.
