  • Lemon Bars Deluxe

    Ingredients

    • 1 1/2 c. All purpose flour
    • 1 tsp Baking pwdr
    • 1/2 tsp Salt
    • 14 ounce Can sweetened condensed lowfat milk Grated rind from 1 lemon
    • 1/2 c. Fresh lemon juice
    • 2/3 c. Butter
    • 1 c. Packed dark brown sugar
    • 1 c. Old fashioned oats

    Directions

    1. Combine flour, baking pwdr, and salt. Set aside. Pour condensed lowfat milk into meduim sized bowl; add in lemon rind and juice. Stir till smooth. Set aside.
    2. In a large bowl, cram butter and sugar. Beat well. On lowest speed, add in dry ingredients, beating till blended. Fold in the oats. Sprinkle a bit more which half of the oat mix proportionately over the bottom of a buttered 9 x 13 inch pan. Pat to make a smooth hard layer. Spoon lemon mix over oat layer and spread to make a thin, smooth layer. Sprinkle remaining oat mix proportionately over lemon layer. Bake in the lower third of a preheated 350 degree oven for 30 to 35 min till lightly colored. Cold in pan; then chill for 1 hour before cutting into squares. Store in refrigerator.
