Lemon And Coriander Pan Fried Trout

Ingredients

  • 100 ml Pure extra virgin olive oil, (3 1/2fl ounce)
  • 2 x Ready prepared trout
  • 1 x Shallot, finely minced
  • 1 x Lemon, zest and juice
  • 2 Tbsp. Fresh coriander, finely minced

Directions

  1. Heat 3 Tbsp. of the extra virgin olive oil in a large frying pan, add in the trout and cook for approximately 5 min on each side. Remove from the pan and keep hot.
  2. Add in 1 Tbsp. of extra virgin olive oil to the pan and gently cook the shallot, add in the lemon zest, juice and coriander.
  3. Gradually add in the remaining extra virgin olive oil and heat gently.
  4. Remove the skin from the trout and serve with the lemon and coriander dressing over the top.
  5. NOTES : The lemon and coriander oil dressing blends beautifully with the delicacy of the trout.
