Leftover Turkey: Pumpkin Bean Turkey Chili
Ingredients
- 2 x Cloves garlic chopped
- 1 c. Bell peppers minced
- 1 1/2 tsp Oregano
- 1 1/2 tsp Cumin
- 1 1/2 tsp Chili pwdr
- 1 tsp Salt
- 1/2 tsp Black pepper
- 14 1/2 ounce Chicken broth
- 15 1/2 ounce Great northern beans Liquid removed and washed
- 16 ounce Dark red kidney beans Liquid removed and washed
- 14 1/2 ounce Crushed tomatoes Undrained
- 16 ounce Pumpkin
- 2 1/2 c. Turkey light meat skinless Cooked and cubed
- 1/2 c. Water
Directions
- Heat oil in a saucepan over medium heat. Add in onions, garlic, bell peppers, oregano, cumin, chili pwdr, salt, and black pepper; cook till vegetables are tender. Stir in chicken broth, beans, tomatoes, pumpkin, turkey, and water. Bring to a boil, stirring occasionally. Simmer 45 min over low heat.
