  • Leftover Turkey: Pumpkin Bean Turkey Chili

    Ingredients

    • 2 x Cloves garlic chopped
    • 1 c. Bell peppers minced
    • 1 1/2 tsp Oregano
    • 1 1/2 tsp Cumin
    • 1 1/2 tsp Chili pwdr
    • 1 tsp Salt
    • 1/2 tsp Black pepper
    • 14 1/2 ounce Chicken broth
    • 15 1/2 ounce Great northern beans Liquid removed and washed
    • 16 ounce Dark red kidney beans Liquid removed and washed
    • 14 1/2 ounce Crushed tomatoes Undrained
    • 16 ounce Pumpkin
    • 2 1/2 c. Turkey light meat skinless Cooked and cubed
    • 1/2 c. Water

    Directions

    1. Heat oil in a saucepan over medium heat. Add in onions, garlic, bell peppers, oregano, cumin, chili pwdr, salt, and black pepper; cook till vegetables are tender. Stir in chicken broth, beans, tomatoes, pumpkin, turkey, and water. Bring to a boil, stirring occasionally. Simmer 45 min over low heat.
