  • Lazy Days Fruit Salad With Creamy Walnut Vinaigrette

    Ingredients

    • 1 c. extra virgin olive oil
    • 1 c. lowfat sour cream
    • 1/4 c. white wine vinegar
    • 1 x Dijon mustard
    • 1 Tbsp. Worcestershire sauce juice, of half a, lemon
    • 1/4 c. minced red onion
    • 1/4 c. minced fresh thyme
    • 1 Tbsp. minced shallot
    • 1/2 c. minced toasted walnuts
    • 1 x salt and pepper lazy days fruit salad
    • 1 c. fresh apricot, cut in wedges
    • 1 c. seedless red grape
    • 1 c. pitted sweet cherries
    • 1 c. anjou pear, cut in wedges
    • 1 c. peach, cut into wedges
    • 1/4 c. minced fresh chives

    Directions

    1. In a large bowl whisk together oil, lowfat sour cream, vinegar, mustard, Worcestershire sauce, and lemon juice till well combined.
    2. Add in onions, thyme, shallots walnuts and salt and pepper to taste. Cover and chill till ready to use. Will keep covered in refrigerator for 3 or possibly 4 days.
    3. lazy days fruit salad:In a large bowl, gently toss apricots, grapes, cherries, pears, peaches and chives together. Drizzle 1/2 c. creamy walnut dressing over top, mixing gently to lightly coat all fruit, adding additional dressing to taste.
