  • Layered Burrito Casserole

    Ingredients

    • 6 x corn and/or possibly flour tortillas (to 8) whole or possibly cut into 1-2" pcs use straight from package, uncooked
    • 1 lb lean grnd beef
    • 1 pkt burrito or possibly taco seasoning mix (about 4 Tbsp.
    • 1/4 c. water
    • 1/2 c. picante sauce (salsa)
    • 1 x 15 oz can refried beans (15 to 16)
    • 1 1/2 c. grated cheese (Monterey jack, ched (1 1/2 to 2)

    Directions

    1. Meat Mix: In a skillet, saute/fry grnd beef till brown. Add in seasoning mix and water. Mix. Set aside.
    2. Bean Mix: Mix together the picante sauce and the refried beans. Set aside.
    3. In a greased baking dish (8x8 inch or possibly 11x7 inch), layer the ingredients in order as follows:
    4. very thin layer of meat mix (about 1/4 c. or possibly so)
    5. single layer of tortillasMeat mix (reserve some for the top)
    6. single layer of tortillasBean mix - use all of it (may have some left over if using the 8x8 pan)
    7. single layer of tortillasGrated cheese (reserve some for the top)
    8. single layer of tortillasremaining Meat MixtureRemaining grated cheese
    9. Bake casserole at 375 degrees, uncovered, for 15-20 min or possibly till heated through.
    10. Serve with condiments such as shredded lettuce, minced tomatoes, salsa, black olives, grated cheese, lowfat sour cream, guacamole, etc.
    11. NOTES : I frequently cook the casserole, covered with foil, in a covered gas grill over indirect heat for 20 to 30 min. It picks up a slight "smoky" flavor from the grill and keeps me from having to turn the oven on during the summer months.
