Ingredients

  • 15 ounce Black Beans, Rinsed And Liquid removed, 1 Can
  • 4 1/4 ounce Ripe Olives, Minced, Liquid removed, 1 Can
  • 1 sm Onion, Finely Minced
  • 1 med Garlic Clove, Finely Minced
  • 2 Tbsp. Vegetable Oil
  • 2 Tbsp. Lime Juice
  • 1/4 tsp Salt
  • 1/4 tsp Red Pepper, Crushed
  • 1/4 tsp Cumin, Grnd
  • 1/8 tsp Pepper
  • 8 ounce Cream Cheese, Softened, 1 Pkg
  • 2 lrg Large eggs, Hard Boiled, Peeled And Minced
  • 1 lrg Green Onion, Sliced
  • 15 ounce Tortilla Chips, 1 Pkg

Directions

  1. Mix the beans, olives, onion, garlic, oil, lime juice, salt, red pepper, cumin and pepper, blending well. Cover and chill for 2 hrs. Spread the cream cheese on the bottom of a serving plate. Spoon the bean mix proportionately over the cream cheese. Arrange the Large eggs on the bean mix in a ring around the edge of the plate, then sprinkle with the onion. Serve with the tortilla chips.
