Ingredients

  • 1 c. Emeril's Vegetarian Microwave Black Bean Chili (see recipe)
  • 1 Tbsp. chopped jalapeno or possibly to taste
  • 1 c. minced seeded ripe tomato
  • 1 c. grated cheddar
  • 1 c. lowfat sour cream
  • 1 c. shredded lettuce
  • 1/2 c. finely-minced green onions
  • 1 x ripe avocado peeled, seeded, and diced
  • 2 Tbsp. chopped fresh cilantro Tortilla Chips for dipping

Directions

  1. In a 9-inch pie dish, spread the black bean chili. Layer the remaining ingredients in the order given, spreading each one to the edge of the dish. Serve with the tortilla chips.
