    • 1 1/2 c. Flour
    • 2/3 c. Powdered sugar
    • 1/2 tsp Salt
    • 3/4 c. Cool butter
    • 3 x Large eggs
    • 1 1/2 c. Sugar
    • 3 Tbsp. Flour
    • 1/3 c. Lemon juice
    • 2 tsp Lemon rind -- grated Powdered sugar -- for Topping


    1. Mix flour, powdered sugar, and salt. Cut cool butter into 1/4" slices and cut into flour mix. Mix to a fine crumb stage. Press proportionately into the bottom of a greased 9x13" pan. Bake 20 min at 325F. Beat Large eggs and add in remaining ingredients, except powdered sugar. Mix well. Pour lemon mix over warm crust, increase heat to 350F, and bake another20 min till golden brown. Sift powdered sugar onto bars while warm. Cold in pan on wire rack.
    2. Cut into small squares and then in half to make diamond shaped bars. Cover and store in refrigerator, serve chilled.
