    Cheesy spinach filling rolled in tender lasagna noodles and smothered in your favorite pasta sauce.The whole family will love these.Great for kids' lunch boxes too.

    Ingredients

    • Lasagna noodles - 12
    • boiling water- 12 cups
    • salt -(optional)
    • Large eggs- 2
    • Chopped fresh spinach,stems removed,lightly packed- 2 & 1/4 cups
    • Ricotta cheese- 2 cups
    • Grated mozzarella cheese -3/4 cup
    • Grated Parmesan cheese-1/3 cup
    • Chpped fresh basil-2 tbsp,or dried 1 & 1/2 tsp
    • Pasta sauce-4 cups
    • Grated Mozzerella cheese-1 cup

    Directions

    1. Cook lasagna noodles in boiling water and salt in a large uncovered pot for 15 mins,stirring occasionally,until tender but firm.Drain.
    2. Beat eggs with fork in a large bowl.Add next 5 ingredients.Stir well.Makes about 3 & 1/2 cups filling.Spread 1/3 cup filling on 1 lasagna noodle.Roll up,jelly roll- style, from short end.Repeat with remaining filling and noodles.
    3. Spread 1 cup pasta sauce evenly in a greased 9 by 13 inch ( 22 by 33 cm) pan.Arrange spirals,seam- side down, in single layer on top of sauce.Spoon remaining pasta sauce onto spirals.Cover with foil.Bake in 350 F (175 C) oven for about 40 mins, until heated through.Disacrd foil.
    4. Sprinkle second amount of mozzarella cheese over top.Bake, uncovered , for about 15 mins until cheese is melted. Freezes well.Makes 12 spirals.
