  • Lasagna Soup

    Wow your friends with this delicious soup...great for the winter!

    Ingredients

    • 2 Tbsp EVOO
    • 1 lb ground beef or ground turkey
    • 1 large onion, chopped
    • 3-4 garlic cloves, chopped
    • 32 oz chicken broth, low sodium
    • 2 c water
    • 28 oz crushed tomatoes
    • 1 lb lasagna noodles, broken up
    • 1 c fresh basil leaves, torn
    • 1 c ricotta cheese

    Directions

    1. Heat EVOO over medium heat.
    2. Add ground beef or turkey and season with salt and pepper.
    3. Cook meat until browned.
    4. Stir in onion and garlic, cook until soft.
    5. Stir in 2 c of water, chicken broth and tomatoes.
    6. Cover and bring to a boil.
    7. Add lasagna noodles and cook until al dente.
    8. Stir in basil and season with salt and pepper if needed.
    9. Serve in bowls with dallop of ricotta cheese on top or pass cheese around for guests to top their own soup.
