Lasagna Soup
Wow your friends with this delicious soup...great for the winter! Ingredients
- 2 Tbsp EVOO
- 1 lb ground beef or ground turkey
- 1 large onion, chopped
- 3-4 garlic cloves, chopped
- 32 oz chicken broth, low sodium
- 2 c water
- 28 oz crushed tomatoes
- 1 lb lasagna noodles, broken up
- 1 c fresh basil leaves, torn
- 1 c ricotta cheese
Directions
- Heat EVOO over medium heat.
- Add ground beef or turkey and season with salt and pepper.
- Cook meat until browned.
- Stir in onion and garlic, cook until soft.
- Stir in 2 c of water, chicken broth and tomatoes.
- Cover and bring to a boil.
- Add lasagna noodles and cook until al dente.
- Stir in basil and season with salt and pepper if needed.
- Serve in bowls with dallop of ricotta cheese on top or pass cheese around for guests to top their own soup.
