  • Lamb with Chickpeas and Cilantro

    A very fragrant dish made with lamb or chicken. it is inspired from a small restaurant that served traditional Han Chinese food. Sadly it closed, but this is a pretty close approximation. Enjoy.

    Ingredients

    • 1/2 lb ground lamb or chicken
    • 1 can chickpeas, rinsed and drained
    • 2 uncooked potatoes, peeled and diced
    • 1 onion, chopped finely
    • 2 cloves garlic, crushed
    • 1 bunch fresh coriander, chopped finely (about 1 cup)
    • 1 bunch chard or spinach, washed and chopped (1-2 cups)
    • 1 Tbsp curry paste
    • 1/2 cup broth or water
    • 1 Tbsp tomato paste or 1 tomato, chopped
    • 1 tsp soy sauce
    • Dash Tabasco or 1/2 tsp chili flakes

    Directions

    1. Over medium heat, brown ground meat, garlic and onions. Crumble with a spoon or fork.
    2. Add the various seasonings (except coriander) and potatoes. Stir so everything is coated.
    3. Add chickpeas and broth (or water). Lower heat to low, cover pan, and allow mixture to simmer until potatoes are almost cooked - about 10 minutes.
    4. Add fresh coriander and chard (or spinach). Combine. Cover, lower heat and allow to simmer 5 minutes until chard is cooked.
    5. Serve with rice.
