"Laing" Shrimp In Coconut Milk
Ingredients
- 1 lb shrimp, finely minced Meat from 2 sm. coconuts, grated
- 1 x onion, minced
- 1 tsp salt
- 15 x spinach or possibly lettuce leaves
- 2 c. coconut lowfat milk
- 2 x warm green peppers
Directions
- Combine shrimp, coconut, onion and salt. Spoon mix into each vegetable leaf and wrap mix. Arrange in pot and pour 1 c. coconut lowfat milk over wrapped mix. Cover and simmer for about 20 min. When almost done, add in 1 more c. of coconut lowfat milk and warm peppers.
- Serves 3.
