This is a recipe we adapted to suit our tastes living on the Kwelera River East Coast South Africa,
Its simple and easy to do and great for the out doors , We do ours on a Skottle braai, a disc bbq device,otherwise a large frying pan is good

Ingredients

  • BUTTER
  • FRESH GINGER
  • FRESH GARLIC
  • SEAFOOD SPICE
  • OLIVE OIL
  • FRESH CHILLI
  • PERI/PERI OIL
  • SWEET CHILLI SAUCE
  • MUSHROOMS (OPTIONAL)
  • FRESH LEMON
  • WHITE FISH {KOB-GRUNTER-HAKE-
  • KINGKLIP)
  •  QUANTITIES ARE TO TASTE AND RELATIVE TO THE AMOUNT OF FISH
  • AS A GUIDE FOR 500 G FISH FILLETS
  • 1 INCH SQ GINGER
  • 1 LGE CLOVE GARLIC
  • 2 CHILLI SEEDED AND CHOPPED
  • JUICE OF HALF LEMON
  • 2 TBS OLIVE OIL
  • 10ML PERI/PERI OIL/Chilli OIL
  • 2 TBS SWEET CHILLI SAUCE

Directions

  1. GRATE GINGER-,GARLIC
  2. CHOP CHILLI.
  3. MIX OLIVE OIL,GINGER/GARLIC,CHILLI/PERI OIL,SWEET CHILLI LEMON JUICE (ADD SOME ZEST OF LEMON IF DESIRED) LET SIT FOR AN HOUR TO INFUSE.
  4. SPRINKLE SEAFOOD SPICE ON FISH FILLETS LIBERALLY
  5. PUT BUTTER IN WOK/PAN ON MEDIUM HEAT,
  6. ADD CHOPPED MUSHROOMS THEN FISH AND POUR MIX OVER FISH
  7. FRY SLOWLY TURNING FISH IN SAUCE REGULARLY.
  8. SERVE OVER RICE
