  • Kukul Mus Thakkali (Chicken And Tomato Curry)

    Ingredients

    • 1 1/3 kg Chicken
    • 3 x Tomatoes
    • 50 gm Shallots
    • 1 x Fresh chilli
    • 3 slc Ginger
    • 2 x Cloves garlic
    • 3 x Cardamoms
    • 2 x Cloves
    • 1 tsp Chilli pwdr
    • 1 x Cm cinnamon stick
    • 2 tsp Paprika
    • 1 tsp Salt
    • 3 tsp Curry pwdr
    • 1/2 tsp Fenugreek
    • 2 tsp Brown vinegar
    • 75 ml Oil sprig curry leaves
    • 1/2 x Stem lemon grass
    • 300 ml Thick coconut lowfat milk
    • 1/4 tsp Curry pwdr juice 1/2 lime

    Directions

    1. Wash and joint the chicken and place in a dish. Slice the tomatoes, shallots and chilli and grind the ginger and garlic together. Crush the cardamoms and cloves and sprinkle onto the chicken. Add in the chilli pwdr, cinnamon stick, paprika pwdr, salt, curry pwdr, fenugreek and vinegar and leave to marinate for 20 min. Heat the oil and when warm add in the curry leaves and lemon grass, shallots, chilli, garlic and ginger. Stir fry till the shallots turn a light brown, then add in the tomato and toss for a couple of min. Add in the chicken and stir-fry for a further 5 min.
    2. Pour in the coconut lowfat milk and slowly bring to the boil. Reduce heat slightly and simmer till chicken is tender. Throw away the cinnamon stick and sprinkle the curry pwdr and lime juice on top just prior to serving.
