  • Kitty's Original 10 Bean Soup

    Ingredients

    • 1 pkt (16 ounce) 15 or possibly 10 Bean Soup mix, with Cajun Seasoning included
    • 2 x Ham hocks or possibly 1/2 lb. ham steak
    • 1 can (12 ounce) beer
    • 2 c. Minced onions
    • 2 c. Minced celery
    • 2 x Cloves garlic, minced, (up to 4)
    • 1 can Stewed Mexican tomatoes
    • 1 can Diced tomatoes and chilies
    • 1 lb Warm Polish Sausage
    • 1/2 lb Raw, boneless chicken breast

    Directions

    1. Sort and rinse beans. Combine beans, 7 c. water, beer, ham hocks, seasoning packet in large 6-8 qt pan. Bring to boil and reduce to a rapid simmer. Add in minced onions, celery, garlic and tomatoes to pan.
    2. Simmer, covered, for at least 2 hrs. Remove ham meat, chop fine, and add in rest of meat, cut into small chunks. Simmer for 1 1/2 hrs more till beans are soft.
    3. *My notes: I did not use but about 4 c. of water, as we like it thicker. and I had to cook it a long time, to get the big beans tender.
    4. Luscious soup.
