    Every who knows me knows I love anything spicy. I put crushed red pepper and hot sauce on almost everything! When I started hearing and reading recipes for buffalo chicken chilli, I couldn't resist making it for myself. Heres my version, it's got just the right amount of spice, its hearty and good for you too! PS: This is one of those recipes that tastes even better the next day! :) That's why I make such a big batch.

    Ingredients

    • 2 lbs. Lean Ground Chicken
    • 2 15 ounce cans of red kideny beans
    • 4 celery stalks sliced in half moons
    • 1 Red Bell Pepper Chopped
    • 1 Green Bell Pepper Chopped
    • 4 Garlic Cloves Minced
    • 1 Large Onion or 2 Small Onions Chopped
    • 1 Large Bottle of Franks Red Hot Sauce (or your favorite hot sauce)
    • 2 28 oz. Cans of Crushed Tomatos
    • Olive Oil
    • Chilli Powder
    • Garlic Powder
    • Cumin
    • Nutmeg (just a dash will do!)

    Directions

    1. Saute Onions and Garlic in Olive Oil until they start to brown.
    2. Add Peppers and Celery saute for 5 min.
    3. While you are sauting your veggies, in a seperate pan, brown ground chicken.
    4. After 2 min, add half the bottle of hot sauce to the chicken mixture and continue to cook the chicken until no longer pink (about 4 min)
    5. Add the other half of hot sauce, crushed tomatoes to veggie mixture.
    6. Once chicken is browned, add all the chicken (plus hot sauce juices from pan) to the veggie pot.
    7. Continue to cook for 30 min.
